What is it?
Kombucha is a bubbly drink made by adding a kombucha culture containing healthy bacteria and yeast to sweet tea. It's that simple. Over time, the end result is a fizzy, slightly tart, tasty thirst-quencher that contains less sugar and a fraction of the calories of soda, and is rich in probiotics, antioxidants, enzymes, and vitamins.
Kombucha could be a couple hundred years old, it could be a couple thousand years old, nobody really knows for sure. One story places kombucha in the Tsin Dynasty around 220 BC where it was used as a health elixir. It's generally thought that kombucha was first brewed in the far northeast region of China, made its way through Russia where they brewed kvass, then Germany in the early 1900s, before making its way through France and finally to the United States.

Our goal
We want to brew a drink that's refreshing enough to have after a jog on the treadmill, light enough to drink with tacos, healthy enough to drink for guiltless binge-watching on the couch, and tasty enough to keep coming back for more.
Our bottled kombucha is tea-forward and organic. It consists primarily of different blends of teas, herbs, roots, and spices with no added fruit juices. These blends are light and crisp. Our kombucha on tap can be more flexible. We use as much local fruit that central Arkansas has to offer. So look for fresh, seasonal offerings as the fruits become available.

Our process
After a quick browse on the Internet you'll see claims that kombucha is a miracle health drink, able to cure whatever's wrong with you. Unfortunately these statements do more harm than good, having little data to back them up. We're not going to make any miraculous claims about what kombucha can do for your body, but we do like to note all the good stuff contained in each bottle.
Our kombucha is naturally high in antioxidants, living probiotics, organic acids, B vitamins, and has low calories, low sugar, contains no preservatives, and is non-alcoholic (<0.5% ABV). Some of our flavors will have additional nutrients based on the specific teas and herbs used. We only brew with organic cane sugar and our water is filtered to remove chlorine and contaminants while leaving essential minerals like calcium and potassium. Our kombucha is raw and unpasteurized, gravity-fed from the fermenter, and all done by hand.
